Changing Mentality

What do I mean when I say changing mentality ?

I think some people think well its easy to lose weight just don’t eat that chocolate or only eat when your hungry and I have actually had people say this to me over the years but, I can tell you only people who have said this have never struggled with emotional eating !

I am an emotional eater . There I have said it out loud and it is completely true and would you be shocked if I told you I still emotionally eat ? Well I am not one of these people who has lost weight and says ” I am a reformed emotional eater and I have changed my life ” Nope thats not me . The only difference now from 18 years ago is I now know I am emotional eater . Knowledge is power and it is that power that has helped control my eating habits. Yes I still eat chocolate and cake because I am never going to be one of those people who lead a 100% clean eating lifestyle mainly because I love chocolate and cake to much, but what I try to do is create clean eating alternatives like peanut butter bites, chocolate brownies and other delicious treats replace them with.

Over the last 18 years my emotional eating reared its ugly head and has been with me for all the downs I have had. Strangely enough when I am happy and feeling good food doesn’t seem to be something I think about and I can quite happily go without naughty treats for a good while !

What I really want to try and do is talk to you about how emotional eating controls us and how to break that vicious cycle but firstly the thing you have to do is think about why ! Why do you emotionely eat ? Really dive into it and think how it makes you feel before and after and then and only then can we together work out how to recognise and reduce that negative mindset and create a new positive healthy one !

Turnip Chips

I love chips and especially if they come with a juicy burger. It doesn’t take a genius to tell you, you can’t eat chips all the time and have a good weightless or even maintaining your current weight ! When I became certified in the 2b mindset I was introduced to swapping the usual chips, pasta etc for fantastic alternatives and one of the 1st things I made was turnip chips. They are so tasty and the perfect accompaniment for the burger. Give them a try and let me know how you get on

Clean eating recipes

One of the things that I think most people find difficult is keeping the meals tasty whilst it being easy and simple to cook. One of the biggest reasons people fall off the wagon is because to put in simply they get BORED of what they are eating! I have created some clean eating recipes that are quick, easy and tasty to hopefully keep you interested in making that change to improve your health! March recipe of the month

Spaghetti Squash Lasagna

This sinfully delicious Spaghetti Squash Lasagna is made with all-natural marinara, part-skim ricotta cheese, grated Parmesan cheese, and healthy spaghetti squash.

Ingredients

  • 1 small spaghetti squash (approx. 3½ to 4 lbs.)
  • Nonstick cooking spray
  • 4 cups all-natural marinara sauce
  • 3 cups part-skim ricotta cheese
  • 1 cup grated Parmesan cheese
  • ¼ cup finely chopped fresh basil (optional)

Instructions

  1. Preheat oven to 375° F.
  2. Line large baking sheet with parchment paper. Set aside.
  3. Cut spaghetti squash in half lengthwise. Remove seeds and membrane.
  4. Place spaghetti squash, cut side down, on baking sheet. Bake for 40 to 45 minutes, or until tender. 
  5. Reduce oven temperature to 350º F.
  6. Scrape spaghetti squash flesh into stringy noodles.
  7. Lightly coat 4-quart baking dish with spray. 
  8. Evenly layer half spaghetti squash, half marinara sauce, and half ricotta cheese in baking dish. Repeat with second layer.
  9. Evenly top with Parmesan cheese.
  10. Bake for 30 to 32 minutes, or until golden brown and bubbly.
  11. Garnish with basil (if desired).

Banana egg pancakes

Seriously you need to give these a try. These little beauties have been keeping me going for breakfast for the last 12 months. The are satisfying, full of taste and they also feel a bit naughty to which sits well with my brain! 

Now I am not going to lie it took me a few goes to get the technique right but thats mainly because I am not the greatest when it comes to cooking so it really is one of my biggest achievements in the kitchen, that I can now produce such perfection and it be healthy, clean and completely approved.

My Fitness Journey

Going from someone who couldn’t walk to the top of the road without being out of breath to running my 1st 10k 18 months after, this was a huge achievement for me. I dreamt of being one of those women who ran the park run in their local parks on a Saturday morning. Don’t get me wrong I am a long way from my dream of running a half marathon. My knees are knackered and I am sure I can feel every single step that my foot makes when it makes contact with the road but the fact that I am doing it, albeit going at a snails pace is all that matters. Over the 18 months I figured out that I couldn’t go at other peoples pace and I couldn’t use the breathing technique that everybody else was doing no matter how many seconds I counted in through my nose and out from my mouth. which inevitably resulted in me gasping for air !

I will share with you how to find what works for you, from pace, breathing techniques and running style.
